Food of the Month

Trying to find fruits or vegetables every month that are available in Canada during the winter months can be a little difficult at times. There isn't exactly local fresh produce bursting at the seems this time of year. Thank goodness for greenhouses. Cucumbers are readily available all year round and are one of my favourite veggie snacks.

 
One of my favourite snacks as a kid was sliced cucumbers. They can be eaten plain or for a little extra tang, soak sliced cucumbers with viengar in a bowl. Add salt and pepper for taste. Yum!

Cucumbers are great in salads, wraps or sandwiches due to their mild flavour. Here are a few ideas for sandwiches using cucumbers:

Top a cracker with cheese and cucumber. Simple and delicious. Plus it includes 3 food groups!

Another fun recipe to try with students would be making the "bread" the cucumber for sandwiches.
Slice a cucumber into rounds. Spread spreadable cheese or cottage cheese on one half of the round. Add toppings such as deli turkey meat, cheese or tomato. Top the cucumber round with another slice of cucumber. The fun of this snack recipe is kids could make their own with their favourite veggies or other toppings. Get creative!

Cucumber Boats - along the same lines as spreading celery with goodness, you can hollow out cucumber and fill the vegetable with cottage cheese or even greek yogurt.

 Another great way to try cucumber is as Tzatziki.

This recipe was taken from Foodland Ontario

1 cup plain Greek yogurt
2 Cucumbers, shredded and squeezed dry
1 garlic clove, minced
1/4 tsp (1 mL) granulated sugar
Salt and pepper

Mix the above ingredients together.

Enjoy the dip with veggies or in a pita or sandwich instead of mayo or butter.
